Food to soothe troubles

Margot (yes, playing golf not cooking...)

Blog readers might be led to feel that I believe that cake is the only food group. While it is close to my heart, I do actually eat other things too. Here is one of my favourite comfort foods. My aunt Nancy makes this superbly.

Konigsberger Klopse:
An excellent dish to sooth troubles. Few things are so bad that they can not be improved by the application of Konigsberger Klopse.

Sauce:
1 small onion, chopped
a few cloves of garlic, chopped
olive oil
1 tablespoon flour
1-1 half teacups of milk
bay leaves
lots of capers
juice of one lemon
Method:
Saute chopped onion and garlic until soft, then over a low heat add the flour and stir to make a roux, adding the milk. Stir in capers, bay leaves and lemon juice.
Meatballs:
1 lb lean ground beef mince (or turkey or pork, in any mix)
2 egg whites
Anchovy paste.
1 small chopped onion.
Bread crumbs.
Method:
Mix ingredients together and form into golf-ball sized balls. Place in the sauce. Cover the pot, then simmer over a low heat for about 45 minutes, or until done.

Michele managed a full 20 layers (the most I’ve done is 10). I’m very impressed. If anyone else wants to have a go, do let me know and I’ll post the picture. I shall post my grandmother’s recipe as soon as I get home (I’m in Benenden for a book signing/ judging the creative writing competition with Mr S).

And, I wrote this for The Spectator about Mr R’s supper club. I’m thrilled that spring is here in all its glory and am anticipating a stroll amongst the camellias in the cool sunshine.

Baumtorte — memory cake

Sadie’s recipe:

I've been busy baking this week. So much to remember.

Whip together a batter made of eggs, the right amount of sugar, sufficient flour, the zest of enough lemons and the perfect quantity of vanilla. Oil a tin and heat up the grill until it is the correct heat, spread a thin layer over the bottom of the pan and grill until it is done. Ladle on layer after layer and grill until the side of the cake looks like the rings of a tree. Bake a layer for everyone you need to remember. Decorate with sugared lemon and orange peel, or in spring, frosted violets.
